Nowadays, water/oil interfaces are recognized to be one of the important reaction fields in the L/L extraction process. This asymmetrical fluctuant interface is also of a great interest in other fields like phase-transfer catalysis, transport through biological membranes, ion-selective sensor and colloidal chemistry. However, the analysis of phenomena that happen at L/L interfaces
and the fundamental studies on this specific domain are difficult to perform because these interfaces are inherently buried, thin and hard to probe, independently from the bulks. Combination of non linear optical techniques and molecular dynamic simulations allow the access to structural information of the buried interfaces.
